SHĚN Fermentation is a little business made with sunlight and good vibes from Toulon in the south of France.  We try to connect new flavors, preventive medecine and ancestral techniques to prepare colorful jars of raw, live fermented vegetables.

All our vegetables are sourced from local farmers of our area, either working the land with organic certification of simply following permaculture principles.
Our jars of goodness are unpasteurized, alive and full of natural probiotics.

Who is SHĚN?


My name is Sasha (Hi!). 
I am the face behind the project and the hand fermenting the vegetables.
I grew up in the south of France, in a little village and travelled around the world for about 8 years. (where you probably met me :) )
During my travels I discover live food thanks to Jared and Michelle in Guatemala, which became of my passion.

In 2020, once back from my travels,  I decided to create SHĚN Fermentation, to make people discover the intriguing flavors of fermentation and its health benefits.

La Piquante and L'Ensoleillée, our two first recipes.

So far, SHĚN has developed three recipes : A version of the very popular Korean kimchi, another one with turmeric and curry and finally, a recipe made out of carrots, lemon and dill.

Right now, I am thriving to be a part of the wonderful community of conscious people that are making my beloved region, a place of sharing and growing while respecting the environnement and the people.

This project is for me a way to fusion my interests, my principles and my home town in a way I never thought could be possible.

What is fermentation?

 

Thanks to l'écolodge de Fréjus to prepare beautiful salads with our fermented vegetables.

The lactic fermentation is a conservation method that uses no energy or machines and allow live bacterias called probiotics to develop.

These little guys are naturally living on our vegetables and our environment, will only survive and thrive in right context : No oxygen (anaerobic environment) and plenty of food (the sugar in our vegetables.)
Then, those live, nice bacterias will develop during the fermentation process and prevent other bacterias from coming in and ruining the party... 
In the mean time, they will create new, interesting flavors, pretty cool right?

As opposed to other forms of conservation such as sterilization. fermenting is a process that keeps vitamins and nutrients in the food. More over, the live bacterias will pre-digest the food for us, making it more bio available for our digestive tracks.

Health benefits from live fermented food are almost as many as we have bacterias in our guts... about 100 billions... (kidding!)


What resonates with us 
 

We believe food is a form of medecine. therefore, taking care of ourselves and our bodies BEFORE getting sick is crucial.
In the mean time, we do not want to dissociate pleasure from health and that is why we think we should eat something and makes us feel good and tastes good too! 

For us, live food translates into new textures, new flavors, interesting fusion of flavors and a high risk of getting addicted :)

 The human in the project is very important, this is the reason why we source our vegetable from local farmers that cultivates the land within 50km distance from our workshop. that way, we are feeding a local economy, ruled by solidarity. 
Our labels were designed by the amazing and talented Amaranto studio in Marseille and printed onto craft, recycled paper. 

Our vegetables are prepared with love, patience and care and distributed through around 10 organic shops, farmers markets, and restaurants around our area.

After about a year, I can proudly say that my small business is doing good! People seems happy, curious and enthusiastic. Demand is constantly growing and I'd like to develop my activity through new recipes, products and workshops to pass on the knowledge like it was given to me before.
 

Realistically, that means getting professional equipment that will allow me to produce more, and building my own commercial kitchen to be independent in my job.

First step

4000€

This would be an amazing help for us! Thanks to that, I could get new fermenting recipient (200€), a 1400L fridge (2000€), a dish washer for jars (1500€) and a big scale (300€).
Imagine all the yummy things I am going to make with all that! :)
 

Second step

8000€

If I go through the first step (yeaaaaahhhh!) I will be able to start investing in a commercial kitchen. 

The estimated cost of construction is minimum 4000€, taken into account the walls, roofing, flooring, special material for the inside of the structure and table tops in stainless steel.
